Description

This coffee, produced by small farmers in Alto del Obispo, San Agustin (Huila), comes from farms averaging 3 hectares in size, at altitudes of between 1,700 and 1,800 metres. The producers are part of Asobombo, a group founded to guarantee fair, sustainable prices. They hand-pick ripe cherries, which they pulp using small hand-crank pulpers, then ferment the beans for around 30 to 34 hours. After this stage, they wash the parchment-like beans in clean water before drying them, usually in parabolic dryers.

The Pink Bourbon variety, originally identified in the Huila region of Colombia, was once thought to be a hybrid of Red and Yellow Bourbon, but recent research has revealed that Pink Bourbon is not in fact a Bourbon, but derives from ancestral Ethiopian varieties. It offers exceptional quality, comparable to prestigious varieties such as Geisha. Renowned for its taste potential and enhanced resistance to disease, it is highly sought-after by professionals and consumers alike.
