Whole bean, 1936, Brazil

Description

1936 refers to the year Knopes was established and is a good introduction to high quality coffee and the overall range of products Knopes offers.

To temporarily replace their current 1936, KNOPES has selected the Rancho Grande, which offers a profile similar to notes of orange, caramel, and dark chocolate. The farm's production began in 1933 when Aneite Reis inherited 5 hectares of land at an altitude of 970 meters. Today, the farm is managed by José Carlos Reis and his son Flavio, the son and grandson of Mr. Aneite Reis.

The primary goal of Rancho Grande is to produce high-quality coffee while ensuring environmental protection and the well-being of its workers.

The producers at Rancho Grande are quite forward-thinking, having invested in several static drying boxes to improve the quality of the cherries they wish to produce. For years, they have worked diligently to maintain the standards of the specialty coffee market, focusing on cultivation, harvesting, and post-harvest processing.

This batch undergoes a natural processing method. The beans are moved to static drying boxes, where they dry at 29°C for 16 days. Afterward, they rest for 31 days before being hulled and transported to the COCATREL warehouse, where they are placed on a drying patio for 2 to 3 days before reaching KNOPES.
